GUGLIELMO (ITALY)
Eggplant Parmigiana
Difficulty: 2.5 stars
Cooking time: 30 minutes
Tools: pan, knife, cutting board, baking dish, oven
Ingredients: 3 Eggplants, cheese, parmesan, salt, tomato sauce, onion (optional)
- Cut the eggplants in thin (but not too much) slices, salt them and let them rest for 15 minutes.
- Cook tomato sauce in a pot with some onion slices if you want.
- Fry the eggplant slices in olive oil until golden brown.
- In a baking dish, start with a layer of sauce, then one of eggplant, then mozzarella slices and then parmesan. Repeat until the ingredients are used up, finishing with sauce and parmesan.
- Cook in the oven at 350° for around 30-40 minutes till the surface is golden.
CARLOTTA (ITALY)
Pasta alla Carbonara
Difficulty: 2 stars
Cooking time: 20 minutes
Tools: pot, pan, bowl, spoon, cheese grater
Ingredients: pasta: 400 grams, 120 grams of guanciale, 5 egg yolks, a lot of parmesan cheese,
2/3 big spoons of pasta water, some pepper (not too much)
- Boil the pasta: cook spaghetti in salted, boiling water.
- Prepare the sauce: in a bowl mix together egg yolks
(the number has to be one more than the number of people the pasta is for),
grated parmesan, some pepper and then add a few spoons of the pasta water.
- Cook the guanciale in a pan until it’s crispy.
- When the pasta and the guanciale are ready, mix them in the bowl with the sauce.
- Top with some grated parmesan and it’s ready.
ANTONIA (AUSTRIA)
Kaiserschmarrn
Difficulty: 3 stars
Cooking time: 15 minutes
Tools: 2 mixing bowls, hand mixer, pan, spatula
Ingredients: 1 ½ cups of flour, ⅛ cup of sugar, 4 eggs, 1 ¼ cups of milk, pinch of salt, butter for frying, apple sauce, optional raisins
- Separate the egg whites from the egg yolk and whisk the egg whites.
- In a separate bowl add flour, sugar, milk and a pinch of salt to the egg yolks and combine to a thick batter.
- Add the thick batter to the egg whites and carefully fold it in. If you want to, you can add the raisins at this point.
- Heat up butter in a frying pan and pour in half of the mixture. It should fill out the whole pan and be about ¾ of an inch thick.
- Cook for 3 minutes on medium heat and you should see some bubbles on the top. If you look at the bottom it should be golden brown and crispy. At this point flip the pancake.
- Tear it into bite size pieces with two spoons.
- Add butter into the cracks to make it extra crispy, by frying the smaller pieces on high heat for another 1-2 minutes.
- Serve with apple sauce and powdered sugar.
